Not Sale related today but I wanted to say a BIG Happy Australia day to all my Australian followers! In celebration, I thought I’d share with you the most delicious and super easy Rocky Road recipe EVER. This has become my go-to party piece because everyone loves it, so I hope you enjoy it too. If you love marshmallows and chocolate then you will LOVE these tiny bits of yummy goodness… you may even find yourself sneaking some in whilst the kids aren’t watching (like I do!!). Besides this recipe being delicious and easy to make, there is absolutely no cooking involved (unless you include melting the chocolate!?). Children love making this too, so enlist some help and let them lick the spoon afterwards. 🙂
- 400 g Milk Chocolate (I use half cooking chocolate/half normal milk chocolate)
- 200 g Large Marshmallows, cut in 1/4's (I normally use a mix of half large and half mini ones)
- 1 Cup Desiccated Coconut
- 1 Cup 1 cup Crushed Salted/Unsalted Peanuts OR Rich Tea Biscuits (for a no-peanut alternative, as pictured)
Line a baking tray or ceramic baking dish with baking paper.
Add marshmallows, coconut, and peanuts/Rich Tea biscuits into a mixing bowl and combine them.
Break up the chocolate blocks and melt on medium in the microwave in 1-minute increments, stirring until smooth.
Pour chocolate into the mixing bowl and mix all ingredients together using a spatula (you need to work quickly as it can set quickly).
Pour the mixture into the baking tray/dish, and spread out evenly with a spatula.
Put in the fridge for at least 3-4 hours or preferably overnight.
Remove from the fridge and slice, with a warm knife, into the size you want and serve. These are best served at room temperature so take them out of the fridge at least an hour before serving.
It may possibly be the ugliest recipe you’ll ever make but when cut and displayed on a nice dish it looks really good… there won’t be any leftovers and it’s delicious!
